If I understand you correctly, go to the "Files" tab and double click the "page/file" you want to exclude. A panel should pop up. If you make sure the "searchable" option is not checked you should be okay. You'll have to do this for every page you want excluded. And of course, save your project and recompile another edition of your e-book.

PS If you want the navigational controls on the UI to take you from page x to page y, make sure that page y is directly under page x in the Files panel. (there are buttons to move files up and down in sequence)
